I have just come to the realization that "materials" are not necessarily the same as "Finishes". I create construction drawings for pricing - and currently our "finishes" are handled outside of BIM. We have some material information in the model for rendering, and I would prefer to have it all in the model, just like everything else. We have materials in families, and we use the paint brush to apply paint materials to wall materials? Is this right?
It would be nice to be able to provide material and finish quantities for pricing purposes. We just need to know the proper place to put finish information. Now we are using a finish schedule (should be called a legend or key) which tells the contractor finishes, specs, and general locations i.e. paint 01 - Benjamin Moore model #### - sales area walls). But it is all dumb text. Then we have a room schedule which uses a text parameter for finishes in each room - again dumb text. But what is considered a material, and what is considered a finish? Is wood laminate a finish, or a material? Is paint a material or a finish? Where should the information go? Anyone else?

Obviously, they materials and finishes are not the same in Revit or the real world. In Revit, we don't really have finishes seperate from materials but using the paint tool does work like a finish tool since it only changes the external appearance and not the cut material indications.
I suggest you edit your materials ... probably at the template level for most items... to include the data you want. That data can then be displayed in a material tag.

I found a y/n parameter under materials called "Material:As Paint." If the material is applied using the paint brush tool, it is set to yes. I can do a multi-category material take off of everything in the model, and then use the above mentioned parameter to filter out anything that is not applied with the paint brush. These materials (wall paint, stain, carpet etc.) are more accurately called "Applied Finishes." They are the ones that are applied after the space is constructed. These are the items that we want to put in a seperate schedule for the contractor to order. These are materials that we always seem to handle seperately with an interior designer.
So if I have a material, GWB that has one face painted with Paint Selection PT-2, I think I need to use 2 parameters for my tag. GWB is the material preset in the wall type structure, and it can be tagged in wall sections using a material keynote. Then, taking WWHub's suggestion, I will make a seperate tag that reads the "Material:Mark" parameter and put my PT-2 designation there.
But what if I want to tag the material AND the applied finish - for instance Wood WD-1 with Clear Stain PT-08? Where is the proper place to put the "Applied Finish" information?

Add each material... GWB - PT1 , GWB - PT2 etc.

When I do a take off of Materials, each material has a parameter called "Mark" and another parameter called "Material:Mark" what's the difference?

If you are doing walls, then mark is the wall mark. Materials : Mark is the mark assigned in the material definition.
