when you try to edit the components, are you trying to do so within the projects the you have loaded the components into? because if you are doing so and it does not work, you probably just have to open the component file and edit the materials/colors within the file....after which you will have to reload the component into your project.

if you are talking about changing colour/ texture of your component/ family where your component/ family is consist of numerous partsi.e. to create a table family; you want to be able to change the table leg and table top material from timber to, mild steel or stainless steel/ plastic etc, then in your family creation, you have to create several sub-catagories (object style) and link to your component parts (using property of each parts; my example will be table leg and table top)
Second steps: you have to create material parameter for each of the parts and again link to your component part (using property of each parts), then save your family and then once you load family/ component to project, you should be able to change the each of your sub-catagory's material/ texture/ colour via edit material properties of each sub-components
Hope this help.

Given the items you've listed i'm assuming they are all important dwg's nested into families.
If you open the family and have a look at the settings-->materials, there should be some imported materials. This is what your family is using to define what goes where.
Because you've already loaded it into your project the materials will already be in there. If you now change the materials in the family and reload it, it will NOT update in the project.
You therefore need to change those materials in the actual project. Take note of there names and locate them in your project file.

When I open the family by itself, i dont even have the option of changing the materials. These things are all downloaded from revit city.

I assure you, you do have that option.
Remember you can't actually change the names of these materials just change the accurender material they reference to.
The only way you wouldn't have this option is if the actual imported dwg's didn't have materials setup.
