I need to change door and window tags and use the new tags to create a schedule. I have the schedule set up but need a little help changing tag symbols and numbers.

Download the "families guide" from the autodesk site. It will help you with modifying a tag.
The tag's value is a property of the component being tagged. It might be an instance or a type parameter. Click on the object and change its value. You can also change it in the schedule if it is instance based.
