When I create families the only choices I get 7 material choices. When modeling buildings I get the full list. How do I get the full list to show up when making families?

First, that is way too much information to put into a family and second, you don't need to do this.
If you have a material called glass in your project, all you have to do is have a materail called glass in the family. Remember that "THE PROJECT RULES". The definition in the project for the same material name will always be set by the project.
