Is there a way to specify how REVIT names files when plotting to PDF? When I do a batch plot of a bunch of sheets or even a single sheet REVIT will automatically name the files using "[File name] - Sheet - [Sheet number] - [Sheet title]". I would like to remove the "Sheet -" and also the "[Sheet title]" from the file naming and add the "- [Revision number]" of each sheet at the end. So it looks like this "[File name] - [Sheet number] - [Revision number]". Is this possible?

Google 'Bulk Rename Utility'. It's a free utility that will let you quickly do all sorts of renaming tasks.

You can now do this with the new Revit API addon - Xrev Transmit. Download the trial from the website.
