I created a sub category for walls but now I'm not sure how to move a wall that I have drawn to that category. Does anyone know how to do this? Seems like it should be simple.

Walls, floors, roofs, stairs, curtain walls are all system families. You cannot create, copy, modify, or delete system families, but you can duplicate (copy) and modify the types within system families to create your own custom system family types.
