I've just barely gotten to the point where I can create family types for changeable components, so if anyone can answer this, please keep it elementary - I lack advance knowledge of programming parameters in family types, etc.

In the family:
Select the model text you have already placed and go to its properties,
Under the graphics heading you'll see a row called Text and next to it an "Edit..." button, further to that there is another small box. Click this.
Now add a parameter and name appropriately.
There you go, the text should now be adjustable when loaded into a project.
