Does anybody know whether or not it is possible to export revit panel schedules (2011) to excel??

In previous versions, Revit allowed to export, or even straight copy the scedules into excel, but the new 2011 version doesn't allow you to do either of the previous options.

Does anyone know another way to get this to work?

Still the same, as in the past, export to a text file and open in excel.

you can't export to a text file....when trying to export an electrical panel schedule, the "schedule" is greyed out and will not allow it...

I can easily export any other user created schedule, but not panel schedules.....any ideas

It's not greyed out, it's just grey and works normally. I had the same issue but this post helped me.
