Does anyone know how to set up a family or tag or something so that auto numbers my sheets and knows how many total sheets there are. I want it to say Sheet 'X' of 'total number of sheets'.

No way yet to get automatically like a footer in Word or Excel. You could have a new parameter you add called "total sheets" but you would have to fill in the number manually.
We also had this situation pop up early in our Revit implementation and what we decide to do was get rid of the # of # sheet business. As best we can tell it is a hold over from the manual drafting days of the early 1900's. We simply place a sheet schedule of the title sheet which is always up to date and gives a true picture of the sheets included with the set. This method is now working better than the old # of # thing.
