I am wanting to create a Door hardware schedule for our template and would like to manually type in quantity, but as I put in quantity 3 it puts 3'-0" in the box.  I know it is a setting but not sure which setting it would be.

Also, next question, in this same schedule I would like to have 3 rows followed by the next group (or next header).  I am unsure how to set that up in the sorting or formatting.  See attached, thanks so much

Your problem with quantity is that you made this parameter a length.  It needs to be a number.

Schedules in Revit are not very flexible.  You can not add the three blank rows.  But you can split your schedule in the sheet view and move the sections apart.  (And you could add lines in paper space if you had to .... but I would not.)

That makes sense,  but what if "Type of Parameter" box is grayed out (uneditable)?
