My name is Angela and I am new to Revit but a long time ACAD user. Can you customize items inside of Revit like door symbols and detail titles within Revit or do you have to use the Revit generated items?

Welcome.... The first thing you should learn is to use the Revit HELP. Unlike CAD, The help does HELP! Yin 2010 and earlier you can cusomize view titles, door symbols and other symbols but Elevation callouts are limited. In 2011, you can customize elevation callouts. Read these in your HELP Section, Elevation, and Callout View Tag Setup Changing the Callout Tag for a Callout Creating a Callout Tag Creating a Callout Head Family Labels
