How can I show concrete piles/piers (dashed) beyond in a section view. Will using a poche (earth) as a site cut pattern hide them. I know that I can tell the object style for the piers that it is a dashed line.

Use the linework tool...
Switch to wireframe apply to the piers then switch back to hidden line view (if they're not already visible)
