Is there a possibility to create a joist with an unequal I need a seat of 100MM thick on one side and 150mm on the other. Thanks

Yes. In the joist family, change the seat depth parameter to "Seat 1" (or whatever you want to call it), then on the other end replace the existing seat parameter with "Seat 2".

I'm in the joist family editor and can't find the place to modifiy the "seat" length

It may not be parametric. If you don't see a parameter controlling it, it is likely constraned to work planes, or possibly with dimensions. If it is controlled with a locked dimension, just unlock the dimension and assign a parameter to it. If it's controlled with planes, you may be able to just dimension the work planes and assign a parameter to that dim. You'll have to be careful that there is nothing else controlled with those planes though.
