How can I copy all text from one project to another?

The short answer is you probably can't.

You can copy all text from P1 - legend to P-2 legend. 

You can share keynote files.

You can copy complete 2D drafting views between projects.

You can copy schedule setups and type schedules.

But copying text from one annotated model view to a different project's model view doesn't wok sometimes.
