I'd like to create a new annotation category, essentially a new "text notes" category, such that I have two types of text categories - one for most text elements, and another for notes to myself that I can turn off (but not delete) on final drawings.  How do I do this?

You can't ... sorry.  "Invisible" text is on the wishlist.

Since all annotation (including text) is view specific, why not create a new view that just hold the notes to yourself that you never print.

More views with specific purposes work well in the Revit environment.  My rule of thumb is that for every "printed" view in your project there should be 1-2 times as many working or administration type views that are there to help develop and control the project.

I know this thread is a little old, but this is one of my current questions. Is there a way to do "invisible" text in the latest release? Thanks!

No - And there is no reason to.  Use a working view to keep any notes to yourself.
