We are trying to set up a template and one item we want to change is the default font from arial to simplex.  how do we go about doing this, and can we do it in one easy step?  Or do we have to do it in several spots?  (simplex seems to have all the symbols that we normally use).

now i can't get any of the symbols to work if I type in alt + 0216 (for diameter) using the default font.

Revit uses only TTF fonts.  You can run Charmap from your start / run and then select your font style to see the mapping of the fonts available.  Read your help on text to see how to set up your text.

I did go thru the help menu - it pops up the text type properties.

 

I thought arial was a true type font because it is the default in revit.
