id like to create different levels of floor on the first floor of my house, but i cant seem to figure it out. i know crudely how to do it, but im wondering if anyone knows the real way to do it. for example i want you to step down as you enter the living room, as well as the center of the great room.

another possiblity would be to make a deeper floor for the whole first floor, and then cut out the chunks i dont want. any idea how to do that as well?

You don't need to create a new level to create a "Step down" in that same level, use the "Offset" parameter to do that... if this is what you really want, if not put some images to figure out....

If you are only worried about your floor modeling, I agree completely with Typhoon.   But if you will also have other elements that are level hosted, I suggest you do create another level.  After all, that is what you really have - a split level. 

 

If this is concrete floor and only one step, the floors might be joined but lets say it is wood framing.  How would you build that?  You would build the lower platform, build a low knee wall at the split then build the upper platform.  In Revit, we model it as we would build it.
