I have added some parameters to a crown moulding family and for some reason, when it is loaded into the project, those parameters do not show up. They are Instance type Family Parameters. I need to have the option of adding data like material type, finish type, install date, etc. Any clues to what I did wrong?

a little more info. I also can't seem to make the parameters shared. The option is greyed out. I need to make them shared so they will show up on a schedule.

You need these parameters in a shared parameter file before you create them in the family.  You can read about this in your help.

It sounds like you are creating a profile family, are you creating the molding with a profile family within your project? If you are, then the parameters must be type parameters as you will not get a dialouge box for instance parameters for profiles. Also profiles cannot have shared parameters as their use dictates that any shared parameters would be useless. You can make shared parameters within a family by editing the shared parameters text file when creating your new parameter as long as the familiy is not a profile family. Hope I have answered your question.
