I can edit existing componets in the family editer but they don't change on the plan view of drawing. what can I do to make both match.

I'm not sure what you mean. Did you reload the family and overwrite the existing? Or are you saying you want to match something you've pre-drawn with a new family? Using symbolic lines (that appears only in 2D where they are drawn, i.e. plan view) you can represent an object entirely different (or the same) from it's 3D projection. But you need to hide that model in that particular view using object visibility option (plan, elev, sec or when cut).

I am using a 31"deep fryer component and I need to show a 18" one  I went in to the family editor and changed the dimentiond and saved it as a18" fryer. but when I load it into the drawing it slill shows a 31" fryer  in plan inder the 18"and they are one componet.

I've checked the fyer you attached and found no parametric value in that family. The #18 I see under types is a keynote value and that does not change the size of your model. If this fryer is not that many, you can scale it to 18" if you are only after the space it occupies. If you have a lot of varying fryer sizes, then you have to make your fryer parametric, meaning you have to define the width, deph and height dimensions.
