 The tools to make points and split lines to manipulate the thickness of insulation, and thus achieve directional sloping, is needed on more than just "flat roofs". The most common way to achieve crickets and to direct water to drains and scuppers is to thicken the insulation, but the basic overall drainage is achieved by sloping the underlying structure. Revit currently only allows use of these tapering tools on a so called flat roof. In my experience I have not yet seen a "flat roof", it can be done, but I haven't seen it and it's not common building practice. If you were going to try to slope this way, the insulation would be 2 feet thick on even a moderate size building.

 I can always come back in and draft the lines representing these crickets, but Revit needs to make the option to model them correctly if it is going to move forward as BIM.
