is there a way to make some sort of void form that forms a cutout of a wall (other than wall->edit profile)? somehow attach a void form to a wall?

Did you try to create the "Void" in a family like "Generic Model Wall Based" or "Generic Model Face Based", for example??? You could explain better what really do you need/want...

that would work. I was trying to create a recess in a wall, not going all the way through.

No problem, you can still do what Ty said. Just constrain the void to a certain distance from the wall face so it doesn't go all the way through. 1"...2" 3" etc. Or even better, you could have a dimension / length parameter for 'recess depth' to control the depth.
