Can someone please tell me where I can find a staircase system family? I would like to be able to change the stringer type to a UB instead of a RHS.

Stairs are a system level and you can only set what you see in the type properties but you can alyas set the stair to no stringer and add what you need from other components in place. Why are you so concerned about the stringer? Is this a 3D model concern? Tnot everything needs to be modeled - we always add detail elements in section views.
