In case you didn't know already. In Revit 2009 rooms have a parameter Limit Offset. You can use this in the Room Schedule for Ceiling Height. You will need to make sure your ceilings are set to the same height as the room Limit Offset so your Ceiling Tag with Height will match your Room Schedule.
