i am trying to make a new curtain wall door, did... file, new, family, curtain wall door.... you get the drift. the reference planes were already set up. one of those reference planes sets the top of door at 7'-0" i need to change this and well, i can't simply delete it, or move it up, nothing. not good with reference planes, obviously. any help?

You can add a dimension from the ground plane (Ref. LEVEL) up to that ref. plane (Top)and then add a height parameter to it. This will allow you to change the height of the door as long as its locked to the ref. plane.
