This may be one for the wishlist, because Ican't find anything about it. Does anyone know how to make a sweep profile in a family parametric so you could, for example, change a door casing profile in the project without editing the family?

The stock REVIT door has that already in it.  .... but I think it's an extrusion and not a sweep - either way, it can be done.

I don't mean change rectangular casing dimensions, I mean change the moulding profile from one to another. If that's in the Imperial default Door, I'm missing something.

Sorry but you did say parametric ... what you say now is completely different.

The question now is can you pass a parameter to the family that will allow for multiple -sub families.  You can establish these using visibility parameters ... but beyond a couple that would be a problem and the profile would have to be in the family.

Another user mflure thinks he has a solution for this but I have not yet seen it.

I just wrote up a Tips & Tricks post for this, after wrestling with this last night. Hopefully it helps you out.
