How can I use my own elevation tags with elevation number and drawing number instead of the standard elevation symbol?
Does anyone actually show elevation symbols like the Revit standard?

This has been a request for quite some time. But as elevations are system tools they cannot be replaced with loaded families ala section markers. You just get a choice between circles or boxes.

This is now possible. Go to settings - view tags - elevations and now you can duplicate and edit elevation tags.

So if you can only choose b/w circle and square on the millwork elevation tag, how do you get rid of the text outside the circle? if you erase the txt in the view name box in the elements properties window. it says, "view name box is empty" and it won't let you delete the txt in floor plan view.

This is now possible. Go to settings - view tags - elevations and now you can duplicate and edit elevation tags. You can Create your own symbol and assign that.
