I'm sure we have all been prompted to decide whether we want walls to attatch to a floor's bottom. My question is can you reverse this once you've decided to allow this to happen. Sometimes having walls extend to a floor's bottom is helpfull (as in the case for interior partitions. When you are modeling a building shell with walls that span multiple floors you may not want this. Is there a way to undue this option globally?

No, I don't believe there is but a simple click gets you past it.
