I am trying to edit the interior elevation tag that comes with Revit, however it does not seem as easy to edit as other families.... does anyone have any suggestions?

Elevation tags are system families. Basically you are stuck with either a circle or a square with the multitude of options that allow you to have a filled or empty arrow and move the text arround.

 

This has been a sticking point for most people for a very long time. At least I would like to see the option of a rectangle and an elipse (or stretched circle). But for now you are stuck with the out of the box stuff.

Correction:

Only Elevation Tags are system families.

I found a work around for this issue, since my company didnt want to have the sheet number in the middle like that. instead of using interior elevations, we just use section tags instead. Section tags are not system families therefore you can change it to what you see fit.

 

Take the section tag, turn either the head or tail side off, and shrink the line between them so small that you cant even notice it. voila. You've got your new interior elevation tag.

You will find that the section head travels from one place to another per view, at least it did in 2008. I could get it ceneterd on the first floor plan but then that should shift it to the right side of the sheet on the second floor or visa versa....

 

It can work, we just had to many issues with the graphical location of the callout to pursue that as a legitamite option.
