I have an exterior stone wall with the top of it just below a concrete stair stringer. I want to place a cap on the wall so that there's a slight projection out from the wall face (similar to a water table) as it follows the slope down to the ground. Is it possible to do this with a sweep? If so how? If not what's the best solution?

There a few options...
One, is use my tutorial (not in the tutorial list yet?) search it was uploaded in a post. This explains how to trim a wall to the underside of a stair.
If you want a smooth top as opposed to step, use a ramp to the thickness of the wall. Two different ramps most likely, one for the stone cap and one for the other material.
Then have a normal wall come up to the underside of the ramp.
