I figured it out what seems like the easiest way.  Do roof by footprint and draw the roof boundary.  After you draw the boundary, you can select each edge individually and right-click on it and go to the element properties.  You can then set the 'Plate Offset from Base'  You need to decide what to use as the base.  The best choice is probably related to how you are going to build it.  Are all of the plate heights the same except for the one low side?  If, so, you may want to make a level that is Top of Plate and then set the one low side of the roof as -X feet from the base.  Or you could set the low side as zero offset and then go around to all of the other sides and set their plate heights at +8 feet.

Yup.... edit the roof sketch, split the edge into 3 pieces, take off the define slope on the outer two and then set the plate height of the middle section up to create the desired effect.
