Why would my windows be hosted in a wall with the head height placed at 6' 10-3/4"? The "head-height" default is set @ 6' 11".

There is probably some trim that is sitkcing 1/4" above the actual head height opening in the family. Other than that, the reason is hard to tell without seeing the family that is being placed.
