How do I in a walkthrough fly around a building at like 100' above grade? I can't seem to make it work.

try set a level at 100', set a walkthru path at that level (you might want to set underlay at level 1 so you know where to set you fly-bys), go to elevation and reset your camera view downward for each key frame, make sure you pull your camera view to cover all the building.
Hope this helps

good advice from ale02
i would just like to add that using the 3D view is also helpfull in adjusting the vertical path of the camera in the walkthrough.
also only start with max of say 8 points(key frames) for adjust them then add in aditional points to make your path smooth, this way u will find that you don't have to adjust the new points that you add in.
