I'm trying to print to pdf and all of the sudden it keeps printing to 8.5x11 instead of the designated Arch D.
I've checked properties and Arch D is still 24x36 but it's not printing right.

Have a try with Docuflow to generate the PDF. It shall detect the sheet properly.
