I know how to draw a conical roof, as well as other rectangular roofs. However, when I try to join roofs, so they cut and meet where they intersect, it doesn't seem to want to let me do so for the conical ones. I have a conical roof that is overlapping a gable roof and would like them to join, so the conical roof does not continue inside the building. Does anyone have a way to make this work?

The join function will not cut the roof, it will only give you a join line.  I usually add some reference linework in a roof plan at the juction then edit the roof sketch to that line (offset into adjoining roof to account for structure).  Then I delete the linework.

Sure. Here is an image in section. The conical roof overlaps the large gable roof that is cut, so is there a way to join them? I cant just make a cut in either roof because there is a curve.

Add an in-place void family to cut that conical roof.  But be careful.  If you join the roofs and your in-place void touches the other roof, it will cut tat as well.
