I've downloaded several families from light fixtures to exit signs and when I try to place them in the ceiling plan, they seem to orient themselves as though they are in elevation (I see them from the side).  Also, they do not like to be placed where the ceiling tiles are shown, but rather will only be placed along the ceiling grid or a wall.  Since this has happened with several different fixtures, it leads me to believe this is purely user error and not an issue with the families, though I can't seem to find any settings to change.  Thanks in advance!

Those families are probably "face based". Make sure when you are placing them that you have it set to "Place On Face". This will detect and attach the fixtures to the ceiling face. I don't know why but revit sets it to "Place on Vertical Face" by default. This setting should be a button on the ribbon when placing this type of family.
