The answer to this question is probably staring me right in the face, but.... I am trying to create a roof schedule that shows both the area and slope factor of the roof sections. Slope is a parameter under dimensions in Element Properties in my project, but it doesn't show up as a field when I go to create the schedule. Is there a reason for this?

It doesn't look like that data can be scheduled - you will have to add a field that you manually enter.
